这太旧了(6年前发布)和spring 2.6.1不再支持它很长时间了。

从技术上讲,spring 2.6是基于Spring5.3开发的,Spring5.3是在Hibernate 5.3+上开发和测试的,并且尝试在运行时尽可能地向后兼容Hibernate 5.2。您可以在HibernateJpaVendorAdapter的javadoc和这个问题上找到这样的信息。

它尝试在某个时候加载org.hibernate.jpa.HibernatePersistenceProvider,但是这个类只存在于Hibernate 5.2之后。由于您现在正在使用Hibernate 5.1,因此它抱怨不能用以下错误加载它:
